I’ve loved pancakes since I was a little girl.
My mother used to make the loveliest crepes and pancakes – and learning how to make them has been an absolute joy for me.
Just as I learn how to do everything else – I went on pinterest, and looked up ‘pancake recipes’, and I was glad to see the ingredients were relatively basic.
Ingredients
1.5 cups all-purpose flour (I used Ready-mix Mandasi flour)
2 Teaspoons baking powder
1-2 Tablespoon(s) sugar (Optional, if you will use syryp)
3 eggs
1/4 – 1/2 cup milk
3 Tablespoons butter/margerine (can be melted)
1 Teaspoon salt (optional)
Directions
In a large bowl, sift together the flour, baking powder, salt and sugar.
In a separate bowl, break eggs and mix to foam (the air trapped will help in the rising of the pancake.
Make a well in the center and pour in the eggs.
Add (melted) butter; mix until smooth.
If the consistency seems a bit thick, add a bit of milk until the mixture is of a dropping consistency.
Leave for a few minutes to rise (trust me!)
Heat a NON-oiled griddle or frying pan over medium heat (emphasis on non-oiled because any bit of oil does conteibute to some fried texture in your packake).
I use medium heat 4; on a 0-8 scale.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
This is the most important part: Cover the pan with a tight lid to allow for steam to circulate and cook the inside of the pancake.
Brown on both sides. This should be done over low heat, and steadily.
Dish hot, with fruits, honey or syrup (Optional).
I prefer my pancakes with syrup and a lot of fruit; and I enjoy experimenting with different kinds of fruit.
I also pair my pancakes with other breakfast ingredients.
